Butter Bean Mash

This is a nice alternative to mashed potato and healthier too if you’re the type to add lots of butter and milk to your mash.  Guilty!!  So to avoid the temptation I’ve developed this versatile recipe to use instead!

Butter Bean Mash


½ large onion or 1 small onion chopped finely
Low Calorie Cooking Spray or 1 tsp Olive Oil
½ tsp Ground Cumin (or any spice to suit the dish you’re serving this with)
¼ tsp Salt
1 Tin of Butter Beans (drained and rinsed)
5 tbsp. Water


  1. Fry the onion in the oil or low fat spray until it is brown, just on the point of burning.
  2. Reduce the heat and add ground cumin and salt and continue to cook for another minute.
  3. Then add the butter beans and water and cook until the beans are heated through.
  4. Mash with a potato masher or blend in the food processor if you prefer a smoother texture, adding a little hot water if necessary.
