Delicious healthy chilli for the whole family to enjoy
I’ve recently started to try harder at eating healthier. I couldn’t wait for January to come, after all the excesses of Christmas. Having a small baby too, meant that the easy option was taken more often than not – takeaways, frozen food that can be threw in the oven and forgot about etc. Not that there is anything wrong with this occasionally but I was doing it most days. So in January I joined Slimming World and am now 5 weeks in and it’s going good so far! Now that I’m in the groove I’m starting to experiment more with recipes and ingredients to make meals that the whole family can enjoy. I must admit that I’ve found it hard work cooking absolutely everything from scratch, especially if I have to cook something else separately for the rest of the family. So laziness is the motivation, in an ironic sort of way, to make me come up with tasty meals for the whole family.
1 Large Onion
1 Red Pepper
1 Green Pepper
3 Cloves of Garlic
500g Turkey Mince (or any extra lean mince)
1 Tin of Red Kidney Beans (drained and rinsed)
1 Tin of Plum Tomatoes
2 tbsp. Smoked Paprika
1-4 tsp Chilli Powder (to your personal taste)
1 tbsp. Ground Cumin
1 tsp Salt
2 Beef Stock cubes
1 500ml Carton Tomato Passata
1 tsp Sugar or Sweetener
- Chop the onion, peppers and garlic and add to a pan sprayed with low calorie spray or add 1 tbsp. of oil.
- Fry on a low heat while you add all the rest of the ingredients.
- Turn up to a medium heat when everything has been added and then simmer for 20-30 mins stirring occasionally.
- Serve with boiled rice, cauliflower rice, butter bean mash or a jacket potato.
